Slow saffron rice for unhurried evenings

A pot you can leave alone. Basmati, a few threads of saffron, a knob of butter, twenty-five quiet minutes. The almonds go in at the end so they keep their bite.

The trick with saffron is patience. Bloom the threads in two tablespoons of warm milk and walk away while the kettle does its work. The colour will turn the milk into a small piece of evening light — that is what you stir into the rice five minutes before it is done.

I use a heavy-bottomed pan, a tight lid, and the lowest flame the burner allows. No peeking. Twenty-five minutes is twenty-five minutes.

Toast the akbari pistachios separately in a dry pan. Salt them while they are warm. Crown the rice at the table.
