Pumpkin seed brittle for the cookie tin

Caramel that snaps. Pumpkin seeds, sesame, a flake of sea salt, ten minutes at the stove and an hour of patience while it sets.

Toast a generous handful of pumpkin seeds with white sesame in a dry pan until they begin to pop. Set aside.

In a heavy pan, melt sugar slowly with a tablespoon of water and a pinch of cream of tartar. Don't stir — swirl. When it goes the colour of dark honey, kill the heat, fold in the seeds and a knob of butter.

Pour onto parchment, spread thin with the back of an oiled spoon, scatter flaky salt. Snap into shards once cool.
